Chef Greg Couillard's career began in Toronto in the early seventies and skyrocketed from there. He became an overnight sensation as he brought exciting new foods with spicy origins into the heart of the Toronto dining experience.

From there he spent two years catering in New York City, after which he returned to Toronto to open ‘Stelle’ Restaurant, where his innovative cuisine left international critics clamoring for interviews and gushing with accolades. He was affectionately dubbed ‘Toronto’s Spicemeister’ and was soon serving up cuisine for the likes of Robert di Niro, Tom Cruise, Jane Fonda and the Rolling Stones, amongst others. Travel and Leisure, Gourmet Traveler Australia and New York Magazine wrote fantastic reviews, and Di Niro even insisted that Chef Greg visit New York to consult for ‘The Tribeca Grill’.

Chef Greg continued his success with a string of elite restaurants including ‘China Blues’ and ‘Avec’, after which he moved on to the elegant ‘Sarkis,’ which at the time was Zagat’s Top Rated Restaurant. By 2001 Chef Greg had earned Now Magazine’s award as ‘The most influential chef in twenty years’.

In 2005 Chef Greg met David Nganga, and their magical chemistry in the kitchen led them to partner at ‘Habitat World Cuisine', which became yet another great success. From there, the two joined forces at ‘Manyata Courtyard Café’ and ‘The Spice Room’.

Today Chef Greg travels extensively, dividing his time between Ajijic, Mexico and Toronto, Canada. In Ajijic he is partnered with Chef Glenroy Anderson at the fabulous Number Four restaurant, owned by restauranteur Kim Everest, where he dazzles the village ex-pats and Guadalajaran tourists alike with his outstanding spicemastery and superb cuisine.

Chef Greg is currently working on a cookbook/memoir expected to be released in 2012. He also and offers exclusive private cooking classes to Ajijic's fortunate culinary aficionados.
